A few Canning favorites

Easy Crock pot Apple Butter

This is the easiest way to prepare apple butter I have ever seen. A great gift giving Idea. great in a basket of goodies for that sick neighbor or friend.

8 apples - peeled, cored & chopped
4 c. white sugar
4 t. ground cinnamon
1/4 t. ground cloves
1/4 t. salt

Fill a slow cooker with diced apples, sugar, cinnamon, cloves and salt.  Cover, cook on high for one hour. Reduce heat. Simmer, stirring occasionally. for 12 hours, or until thick and dark in color. Fill small jars with hot apple butter, leaving about 3/4-inch space at the top. boiling water bath 10 minutes. Makes 4 cups.

Oven Canned Tomatoes

ripe tomatoes
salt

Scald & peel ripe tomatoes. Place in jars filling the spaces. Add 1 teaspoon salt to 1 quart, tighten by hand. Place on cookie sheet in oven 4 to 5 inches from bottom of oven. Turn oven to 250 degrees for 1 hour. Turn off oven & let cool in oven.
 
                    If  one does not seal. Just put a new flat on the jar, screw down ring & put it back into the oven & do it again.
